As of yesterday, our waffle maker will be put to use a whole more often. For actual waffles, friends. For I have discovered a recipe that actually tastes better than the full-on wheat-and-sugar version.
Who’d have thought that some eggs, butter, a few spoonfuls of coconut flour and a few other magic ingredients could make a whole noisy family quiet in astonishment for… well, at least five seconds. You want some happy silence? Make low carb waffles!

These healthy fluffy low carb waffles are a healthy breakfast, snack or even dessert, packed with protein- Without the need for protein powder! Made with no butter, oil, grains or sugar, these low carb waffles are naturally gluten free, keto friendly, vegan, paleo, grain free, sugar free and dairy free!
Low Carb and Keto Fluffy Waffles Recipe Ingredients:
4 oz Cream Cheese
1 tablespoon melted butter
1 teaspoon vanilla extract
1 tablespoon powdered stevia
4 tablespoons coconut flour
1 1/2 teaspoons baking powder
Low Carb and Keto Fluffy Waffles Recipe Instructions:
Add all the ingredients to a blender and blend it on high for about 1 minute until all the ingredients come out nice and smooth. If you don’t have a blender, you can mix it in a small bowl on medium speed for a minute or two. You will want to make sure you cream together all of the cream cheese so you don’t have any lumps.
Optional: Add cinnamon for extra flavor.
Preheat the waffles iron.
Spray the waffle iron with non-stick cooking spray.
Pour about 1/8 to a 1/4 cup batter for each waffle. Note: the batter only spreads a bit more than the amount you put on the waffle iron. It’s not like the regular carb filled waffle recipe where you put a small amount on the iron and it’s dripping over the edges after a few minutes.
Optional: Top with butter and sugar-free syrup.
Serve warm and enjoy!
